Callie Kiepke - General Manager

  • Born and raised in Arden Hills and New Brighton, Minnesota, Callie loved the hospitality industry from the moment she started as a hostess at 18. She graduated with a degree in Hospitality from the University of Wisconsin-Stout while working as a server and bartender. Her senior year of college, Callie took an internship with TPC Twin Cities, where she was introduced to hospitality operations, sales and event planning.

    After nearly 10 years with TPC, Callie found her home with Morrissey Hospitality at Bunker Hills Event Center. Hired as Catering Sales Manager, Callie was drawn to, and motivated by, the high energy year round at Bunker Hills . In 2018, she became Director of Catering, building strong sales and service teams, and spearheading dozens of successful events. During Covid shutdowns, Callie was instrumental to Bunker Hills’ continued successes – even as they pivoted almost daily. As her time increasingly was spent at Kendall’s, she was reminded how much she loved the daily hustle-and-bustle of restaurant operations. Today, she works as the General Manager, continuing to grow her skillset and be an incredible asset to Bunker Hills.

Chad Methum - Executive Chef

Chad Methum - Executive Chef

  • Executive Chef Chad Methum started working in kitchens in 1984 as a dishwasher, and quickly was promoted to cook. He worked as a restaurant cook throughout high school, and went to culinary school at Hennepin Vocational Technical College after taking a year off. Chad worked as a chef in a hotel during his training, and landed a role as Executive Chef at a small private club in 1992. He continued his career in private clubs and hotels for nearly 15 years, and joined the Morrissey Hospitality family at Saint Paul River Centre in 2004. After taking some time off to take care of his health, he joined Morrissey Hospitality at Hillcrest Country Club in 2017.

    Today, he acts as Executive Chef at Bunker Hills Event Center, overseeing Kendall’s Tavern & Chophouse and all the catered events hosted at BHEC.

Kelene Pfenning - Catering Sales Manager

Kelene Pfennig - Catering Sales Manager

  • A new addition to the Morrissey Team, Kelene has worked in the hospitality industry for over 20 years. Kelene grew up in small town North Dakota then moved around the country for sake of adventure and found herself living in Hawaii for over ten years where she graduated from the University of Hawaii with a Bachelor’s degree in Anthropology. After graduation, Kelene always kept one foot in the hospitality business. Kelene started working in events at this time, working with a restaurant and catering company to execute destination wedding receptions and large-scale corporate events. Kelene and her partner then opened a food truck called Pura Vida Maui, selling Central American food mostly at a street fairs and catered events. Kelene left the island life in 2015 and moved closer to where she grew up as she started her own family. She landed in the north suburbs of Minneapolis in 2017 where she plans to stay. She worked as a restaurant manager and catering/banquet manager at The Lookout Bar and Grill for three years before finding her place here at Bunker Hills Event Center. .

  • What is the best part of working at Bunker Hills? The amazing team at Bunker Hills is by far the best!

    What do you feel is most important when helping a client plan a great event? I think the food choices are a huge part of planning any event.

    If you could have one celebrity guest come to one an event who would it be and why? I would love to host Will Smith. He is my favorite actor!

    What is your favorite thing about working in events? I love getting guest feedback after a successful event.

    What is one of the oddest guest requests you have ever received? Guests asked if they could bring an inflatable pool to the event.

    How did you land in an Event sales career? I started helping with events downtown at the Lumber Exchange Event Center, and fell in love with planning their events.
